In a 1 1/2 quart microwave safe bowl, stir together sugar and corn syrup. Microwave on high for 3 minutes. Stir in peanuts. Microwave on high for 3 to 5 minutes or until golden brown. NOTE: In my microwave I only do it for 4 minutes.
Add butter and vanilla, blend well. Microwave on high one to two minutes more. NOTE: In my microwave I only do it for 90 seconds. Remove from the microwave and add baking soda and gently stir until light and foamy.
Pour onto a lightly greased foil lined cookie sheet. Let cool, then break into pieces. Store in an airtight container. Makes about one pound.
