Mix dry ingredients. Add eggs and pumpkin. (Grease (heavily) and flour a jelly roll pan. Spread mixture into pan and sprinkle with chopped nuts (optional). Bake at 350° for 15 minutes. Turn over onto a towel sprinkled with confectioner's sugar and roll up. Cool completely. Filling 2 T. margarine 1 tsp. vanilla 8 oz. cream cheese 1 C. confectioner's sugar Mix and whip until creamy. Unroll cool pumpkin cake. Spread with filling and reroll. Sprinkle more confectioners' sugar on foil and wrap cake. Refrigerate. |
