| | Directions | | Mix muffin mix as per package directions, set aside. In small bowl mix sugar, and cornstarch. Set aside. Butter 2 qt casserole dish. Spread peaches and 1 cup of the juice on bottom of dish, add almond extract over peaches. Sprinkle cornstarch mixture to top of peaches as well. Dot lightly with butter. Spoon muffin mix over peaches. Bake @ 425° for 30 - 40 minutes or until done in the center. |
