Blend oil and sugar; add eggs and beat well. Sift dry ingredients and add alternately with buttermilk. Add vanilla, prunes, and nuts. Pour into a greased and floured 9x13" pan. Bake at 325° for about 1 hour. While hot, spread topping over top of cake. Delicious warm or cold
TIP: May substitute 1 jar of junior baby food prunes for the cooked prunes.
Buttermilk Topping:
1 C. sugar
1/2 C. buttermilk
1/2 tsp. soda
1 T. white corn syrup
4 T. butter
1 tsp. vanilla
Combine in saucepan and boil 5 minutes.
