Mix the sauce ingredients together and bring to almost boil just until the sugar is dissolved. Put this boiling mixture in a large crock pot and turn on high. Mix cake batter (I found the cake batter a little dry so I add a little milk just so it is mixed well) add to sauce mix in the crock pot. Cook 1 1/2 hours. Do not lift lid of crock pot while cooking. Serve with vanilla ice cream or whipped cream.
-3/4 Cube butter (melted)
-1/2 cup brown sugar
-1 cup grated carrots
-1 teaspoon lemon juice
-1 3/4 cups flour
-1 egg
-1/2 teaspoon soda
-1 teaspoon baking powder
-1 1/2 teaspoons salt

-2 cups Brown Sugar
-3 cups water
