Tomato, Avocado and Fresh Mozzarella Salad - Recipe

This fresh salad is best with those garden tomatoes, but can be made year-round with the store bought ones. Fresh and light have this salda as a side dish or serve some bread on the side for a light lunch.

Directions
  • In a large bowl, whisk the lemon juice, oil, salt and pepper. Add the tomatoes, cheese, basil and mint; toss to coat. Cover and refrigerate for at least 1 hour before serving.
  • Just before serving, cut and stir in avocados.

-6 plum tomatoes - chopped
-16 ounces fresh mozzarella cheese pearls - drained
-1/3 cup fresh basil - minced
-1 tablespoon fresh mint - minced
-2 avocados , peeled and chopped
