Country Ham Casserole - Recipe

Leftover ham, potatoes, mushrooms, broccoli (or peas, carrots, etc.), and cheese for a tasty treat... easy to double for larger servings.

Directions
  • While steaming potatoes, prepare your choice of ham; set aside.
  • In a medium non-stick pan, melt the butter.
  • Saute mushrooms and scallions until tender. Turn down heat to low to simmer and add broccoli and garlic.
  • Add water to gravy mix and add to sauce pan. Increase heat and stir in milk, stirring often. It will thicken.
  • Once thickened, turn down the heat and add the ham, potatoes (cut in half then sliced), and grated cheese; stir to mix ingredients.
  • Turn into a 9 x 9 pan sprayed with cooking spray. Bake at 350 degrees for about 30-40 minutes.
  • You can add a layer of cheese for a brown cheesy crust.

-1 cup shredded or cubed ham
-2 medium potatoes, (steamed for 20 min)
-1 tablespoon butter
-1/2 cup fresh sliced mushrooms
-1 scallion thinly sliced
-1/2 broccoli cut in small flowerets
-1 clove garlic, grated
-1/2 package country gravy mix
-1/2 cup water
-1/2 cup milk
-1/2 cup grated cheddar cheese
