Spicy Turkey Meatloaf - Recipe

I love meatloaf, but I do not eat beef or pork. I wanted to make a meatloaf that was tasty and similar to the regular meatloaf recipes. This recipe is just as good as the regular recipes and can be served with mashed potatoes, or similar, or eaten cold as an entree or as a sandwich. The peppers are not hot in the recipe, but make the turkey flavor stand out.

Directions
  • In a large bowl add turkey, dried onion soup, spices, and bread crumbs.
  • Remove seeds from all peppers.
  • Peel onion and cut into quarters.
  • In a food processor, mince peppers and onion.
  • Add pepper and onion mixture to bowl.
  • Add egg to bowl mixture.
  • With gloves mix all together thoroughly with hands.
  • Spray 10" square baking dish with non stick spray.
  • Preheat oven to 350 degrees.
  • Place meatloaf mixture in baking dish.
  • Spread Hoisin sauce on top of mixture.
  • Bake approx 40 minutes or until meatloaf temperature registers 160 degrees.
  • Remove from oven.
  • Remove extra juices with turkey baster and discard.
  • Let meatloaf rest approx 15 minutes and serve.

-2 pounds ground turkey
-1 packet dried onion soup
-1 egg
-1 onion
-2 jalapeno peppers
-3 Serrano peppers
-1/4 teaspoon salt
-1/4 teaspoon pepper
-1/2 teaspoon thyme
-1/2 teaspoon rosemary
-1 cup bread crumbs
-1/2 cup Hoisin sauce (more to taste)
