Fruity Chicken Salad - Recipe

This is my wife's fruity chicken salad. We usually eat it with crackers or in pita bread for a quick and easy snack.

Directions
  • Boil chicken breasts until fully cooked (usually 10 to 15 minutes).
  • Cut or shred chicken breasts into bite size pieces.
  • Turn skillet on high (dry) and pour in minced garlic and let caramelize.
  • Place chicken pieces in the pan once garlic has browned.
  • Stir in 1/2 cup of chicken broth from the boiled chicken (or use canned broth).
  • Cook on high until chicken broth has cooked down and chicken starts to brown.
  • Turn off heat and stir in the Tony Chachere's mix.
  • Mix in celery, apples, grapes, pecans, sugar and mayonnaise.
  • Serve in pita bread or on crackers.

-1 teaspoon Tony Chacheres Original Creole Mix (more if preferred)
-4 stalks celery - chopped
-1/2 apple - sliced, diced
-1 cup grapes - halved
-1/4 cup pecans - chopped
-1 tablespoon sugar
-3/4 cup mayonnaise
