Stir powdered sugar into potato till it stays together. Put on wax paper with wax paper on top. Roll out to at least 1/4 inch thick. Spread a thin layer of peanut butter. Roll into log. Leave out over night or in refrigerator. Slice and if you wish add sprinkles.
