REVISED HUMMINGBIRD CAKE - Recipe

DO NOT USE A MIXER. Whisk eggs, oil, and vanilla, then sugars, then applesauce. Combine dry ingredients, then sift into wet mixture. Stir until blended, then fold in fruit and nuts. Make: one 9x9" and four 6" round OR three 8" round and one 8x8". Spray pans and dust with sugar.

Bake: 50 min. test to see if done. This cake freezes very well. I use cream cheese frosting.

-3/4 cup applesauce
-1/2 cup sugar
-1/2 cup brown sugar
-3 Eggs
-1 tablespoon vanilla
-3 cups flour
-1 tablespoon cinnamon
-1 1/2 teaspoons baking soda
-1/2 teaspoon baking powder
-1/2 teaspoon Salt
-1 can pineapple, crushed (20 ounce can)
-2 cups diced banana
-1 cup flaked coconut
-1 cup chopped walnuts or pecans
