- Warm olive oil in a large skillet over medium high heat.
- Cook the sausage links in the olive oil until browned.
- Remove from skillet and drain on paper towels.
- In a large skillet over medium heat, melt the butter and stir in the onions.
- Cook the onions until translucent.
- Stir in the apples, brown sugar and vinegar.
- Gently stir the mixture while cooking until caramelized, approximately 15 minutes.
- Season with salt and pepper.
- Place a split hoagie roll on a plate, top with a sausage link and some of the caramelized apple and onion mixture. Add some mustard and serve.
