| Directions |
- Slice the sausage on a bias into 1/2 inch thick slices.
- In a large non-stick frying pan, add 1 tbsp of the olive oil and saute the sausage over medium high heat until slightly caramelized.
- Add 1 more tbsp of the oil and then add the onion.
- Season with salt and pepper to taste.
- Lower heat to medium and saute the onion until it begins to caramelize.
- Then add the roasted garlic, brown sugar, and water. Stir to mix and raise the heat to medium high again. Stir occasionally until the water evaporates.
- Then add the pasta to the frying pan and heat through.
- In a bowl, beat the eggs and add the Italian seasoning.
- Lower the heat to medium low and add 1 tablespoon of the butter to the frying pan and after it melts add the eggs.
- Stir constantly until the eggs are almost cooked.
- At that point turn off the heat and add the remaining butter and cheese. Stir till incorporated.
- Adjust the salt and pepper to taste and serve immediately.
