| Directions | - Preheat the oven to 350ºF.
- Combine the powdered sugar and the butter; then stir in the 2 cups of flour and mix thoroughly.
- Press the mixture into an ungreased 9- x 13-inch baking pan. Bake 20 minutes.
- While the crust is baking, combine the eggs, sugar, lemon juice, and 2 tablespoons of the lemon zest; then stir in the 1/4 cup flour and the baking powder.
- Pour this mixture onto the baked crust. (The crust doesn't have to be cooled.) Bake an additional 25 minutes.
- After the bars have cooled, sprinkle with the remaining tablespoon of lemon zest, add a generous sprinkling of powdered sugar, and then cut into squares. Makes about 2 dozen.
