Sift onto waxed paper the flour, baking powder and salt. Mix the shortening, sugar and egg in a 3 qt. bowl until light and fluffy. Mix in the evaporated milk and vanilla. Add the flour mixture, about 1/3 at a time, mixing well after each addition. Mix in the cherries and coconut. With 2 tsp., drop mixture about 2" apart onto a greased cookie sheet. Bake near center of oven 12-15 minutes or until light brown. Take from sheet at once.
