| | Directions | | Caramelize 1 cup sugar in iron skillet. At the same time, bring remaining sugar, milk, pecans, salt and butter to a boil in a large pot (mixture will bubble up a lot). Add caramelized sugar to the boiling mixture, stirring vigorously, and cook about 2 minutes to soft ball stage (236°). Remove from heat and beat until mixture thickens and loses a glazed look. Drop by teaspoon onto wax paper. Cool and store in airtight container. Place wax paper between layers. |
