- Combine soy sauce and limeade; set aside.
- Heat oil in skillet over medium high heat.
- Press brown sugar on one side of the fillet and place in pan sugar side down, cooking 2 to 3 minutes.
- Quickly pour soy mixture into pan stirring to dissolve any caramelized sugar.
- Carefully turn fillets, cover and cook an additional 5 minutes.
- Place greens on four plates, place snapper on greens and garnish with fruit.
- Serve additional glaze on side.
