Cream butter, peanut butter and sugars. Add egg and vanilla, beat until creamy. Stir in dry ingredients until blended. Roll dough into 1 inch balls.
Press balls into mini muffin tins. Bake at 350° for 12 minutes. Remove from oven and immediately press one mini peanut butter cup into each hot cookie. Allow to cool before removing from tins.
