| Directions | Stir together sugar, corn syrup & water. Cook over medium heat in large,heavy saucepan until sugar is dissolved & mixture comes to a boil. Continue cooking without stirring to 280°. Stir in peanuts gently so mixture continues to boil. Cook, stiring often, until mixture gets to 300°. This takes some time, so don't be in a hurry. Remove from heat - add soda, salt & butter. Soda will cause it to foam up. Immediately pour on 3 greased baking sheets. Do not spread. I use 3 large sheets of freezer paper, shiny side up, which has been sprayed with cooking spray (PAM). This makes clean up a snap. Allow to cool several hours. Break up & store in airtight containers. Keeps very well. HINT FOR CLEANING THE PAN: IMMEDIATELY AFTER POURING BRITTLE, FILL PAN WITH WATER & HEAT ON HIGH ON STOVE. CLEANS UP MUCH MORE EASILY. |
