Preheat oven to 350°. Mash banana in a large bowl, add the egg white, vanilla extract, butter and dried fruits. Let stand 5 minutes to soften the fruits. Add remaining ingredients. Mix until oats are blended in good. Drop by tablespoonful onto a cookie sheet which has been sprayed with Pam. Bake for 10 minutes. Remove from oven, let sit 1 minute, then remove to a wire rack to cool. Store in an air tight container. Makes 3 dozen cookies. Freezes well. Enjoy!

-1 very ripe banana (mashed)
-1 egg white or 1/4 cup Egg Beaters
-3/4 teaspoon vanilla extract
-3/4 cup frozen unsweetened apple juice concentrate (thawed but not diluted)
-2 tablespoons unsalted butter (softened)
-2 cups quick-cook oatmeal (uncooked)
-1 cup flour
-1 teaspoon baking powder
-1/2 teaspoon baking soda
- pinch of salt
-1 cup dried fruits, such as raisins, cherries, apricots, prunes, dates, cranberries
-1 teaspoon cinnamon
-1/2 cup pecans (chopped)
