Combine 1 c. butter, whipping cream, and flour and mix well. Cover and refrigerate 2 hours or until dough is easy to handle. Roll dough on floured surface to 1/8 inch thick. Cut with a 1-1/2 inch circle cookie cutter. Coat both sides with sugar and place on an ungreased cookie sheet. Prick with a fork 4 times. Bake at 375° for 7-9 minutes or until slightly puffy. Cool on a wire rack.
Filling: Cream 1/2 c. butter and sugar, add vanilla. Can tint with red or green food coloring. Spread about 1 tsp. of filling over half of the cookies, top with the remaining cookies.
