Dukkah - Recipe

This unique seasoning, native to the Middle East, is often used as an accompaniment to breads that are dipped in olive oil and then sprinkled with the ground mixture to add flavor and texture. Dukkah may also be used as a distinctive, flavorful topping for a variety of meat and vegetable dishes.

Directions
  • Place all ingredients into a medium sized skillet over medium high heat.
  • Toast all until fragrant, approximately 3 minutes, stirring often.
  • Remove from the skillet and allow to cool on a plate for 30 minutes.
  • Place all in a spice grinder or use a pestle and mortar to grind the ingredients into a desired texture.

-1 tablespoon coriander seeds
-1 tablespoon cumin seeds
-1 tablespoon sesame seeds
-2 tablespoons almonds - slivered
-1 1/2 teaspoons black peppercorns
-1/2 teaspoon thyme - dried
-1/2 teaspoon sea salt
