- In a large pot, bring about 3 quarts water with 1 tablespoon salt to a boil. While water heats, break or chop broccoli heads into small pieces. (Peel and dice the stalks for a salad, or save them for another use.)
- When water boils, add pasta and cook according to package instructions. About 5 minutes before pasta will be done, add broccoli. Continue to boil until pasta is al dente and broccoli is cooked but not soft.
- Drain pasta and broccoli well. Pour into a serving bowl and stir in blue cheese. Drizzle with olive oil, if using. Serve hot.
