Tender Scones - Recipe |

- Sift together flour, salt and baking powder and 2 tablespoons sugar in a large bowl.
- Cut in butter with fork or pastry blender until it resembles small pebbles.
- Mix in egg and 1/2 cup plus 2 tablespoons cream.
- Stir in any combination of ingredients you want. I used 1/2 cup craisins and 1/2 cup white chocolate chips.
- Preheat oven to 400°F.
- Turn dough out onto lightly floured surface and knead lightly. Pat into a 9" circle and about 1/2" thickness.
- Cut into 12 wedges. Place on baking sheet (not greased).
- Separate, brush tops with a little cream. Sprinkle with remaining 2 tablespoons sugar.
- Bake 15 minutes or until light brown.
- Serve warm.

| - |  | 1/2 lemon - zested |
