RHUBARB MUFFINS 16 - Recipe

Directions
Blend sugar, salt and margarine. Add eggs and beat well. Stir in flour, soda and blend. Fold in rhubarb. Fill paper-lined muffin cups 3/4 full. Bake at 375° for 20-25 minutes. If desired, frost with powdered sugar icing while hot. Makes 18-20.

-2 Eggs
-3/4 cup sour milk (milk + 1 T. vinegar)
-1 teaspoon vanilla
-2 1/2 cups Flour
-1 teaspoon baking soda
-3 cups rhubarb, chopped
