Butterscotch Zucchini Bread - Recipe

Directions

Mix all ingredients with mixer except zucchini, pudding and nuts. Add these by hand. Put in 3 small greased loaf pans. Bake 30-45 minutes at 350°.

-		1 cup oil
-		2 cups flour
-		2 cups sugar
-		3 Eggs
-		1 teaspoon Salt
-		1 teaspoon cinnamon
-		1/2 teaspoon nutmeg
-		1/2 teaspoon grated ginger
-		2 cups grated zucchini
-		1/4 teaspoon baking powder
-		1/2 cup quick oats
-		1 package instant butterscotch pudding
-		1 cup chopped nuts (optional)
