- Peel beets and cut into bitesize pieces. Remember that raw beets will stain everything they touch, so protect countertops.
- Put all ingredients into a saucepan. Cover and simmer until beets are tender, 10 to 15 minutes. Older beets may take longer.
- Strew feta over, if using. Serve warm, room temperature, or cold.
