  • In food processor, pulse yogurt, chutney, lime juice and curry until blended but not completely smooth.
  • Scrape the mixture into medium bowl, add grilled chicken pieces, green onion and cilantro; toss well.
  • Season with salt and pepper.
  • Lay spinach leaves on rolls, spoon chicken salad to top and serve.

-3/4 cup chutney mango
-2 tablespoons lime juice
-2 tablespoons curry powder mild
-1/2 cup golden raisins
-3 chicken breasts boneless, grilled, sliced into bite size pieces
-2 green onions chopped
-1/2 cup cilantro leaves, chopped
-1 cup baby spinach leaves or favorite lettuce leaves
-6 sandwich rolls split
