| Directions | Preheat oven to 350°. Spray bottom only of stoneware loaf pan with non-stick cooking spray. For bread, peel, core & coarsely chop apples. Beat butter & sugar in bowl until creamy. Stir in eggs, lemon juice & vanilla. Combine flour, baking soda & salt in small bowl; add to butter mixture, mixing just until dry ingredients are moistened. Do not overmix. Gently fold apples into batter. For streusel, combine all ingredients in small bowl. Spoon 1/2 of batter into prepared pan. Sprinkle with 1/2 of the streusel mixture. Spread with remaining batter. Sprinkle with remaining streusel mixture; patting gently. Bake 55-60 minutes or until cake tester inserted in center comes out clean. Cool in pan 10 minutes. Remove bread from pan to cooling rack. Cool completely. YIELD: 1 loaf. |
