Soften yeast in water. Mix shortening, sugar and salt with scalded milk and cool to lukewarm. Add softened yeast, eggs, lemon rind and enough flour to make a stiff batter. Beat well. Add enough more flour to make a soft dough. Turn out on lightly floured board and knead until satiny. Place in greased bowl, cover and let rise until doubled in bulk. When light, punch down. Shape into 2 rectangular sheets about 1/4 inch thick. Brush with melted butter and sprinkle with brown sugar and cinnamon. Roll like jelly roll and shape into rings. Place on greased baking sheet and cut with scissors at 1 inch intervals, cutting almost through the rings but not quite. Turn slices slightly so they're not perpendicular to the pan. Cover and let rise until doubled in bulk. Bake at 375 25-30 minutes. While warm, spread with Seven-Minute Frosting* and sprinkle with chopped nuts. Yield: 2 rings. |
