Lime Curd - Recipe

Somewhat like a cross between pudding and jam, curd is a smooth, thick, and rich-tasting. Use it on scones, on toast, as a topping or for a filling in layer cakes. Quick and easy to make.

Lime Curd Recipe
Directions
  • Iin saucepan mix eggs and sugar, beating until smooth. Add juice, zest, butter and salt.
  • Cook over medium-low heat, stirring constantly and scraping down pan sides frequently, until mixture is very thick, about 10 minutes.
  • Remove from heat and, if using food coloring, add it  a drop at a time, stirring in each addition. Don't overdo the color.
  • Pour or scrape into a lidded container. It will keep well for a week if refrigerated.

-1/2 cup sugar
-1/2 cup lime juice, fresh
- zest from 1/2 lime
-6 tablespoons butter
-1 pinch salt
- few drops of green food coloring (optional)
