- Iin saucepan mix eggs and sugar, beating until smooth. Add juice, zest, butter and salt.
- Cook over medium-low heat, stirring constantly and scraping down pan sides frequently, until mixture is very thick, about 10 minutes.
- Remove from heat and, if using food coloring, add it a drop at a time, stirring in each addition. Don't overdo the color.
- Pour or scrape into a lidded container. It will keep well for a week if refrigerated.
