| Directions | Mix hot water, molasses, dry milk, salt, and 1 C each whole wheat and unbleached flour. Stir together to form a thin batter. Sprinkle on the yeast and add shortening and beat for a minute or so. Add the rest of the whole wheat flour and then the white flour. You may use more white flour - it should clear the sides of the bowl. Knead a bit. Shape into a ball and place in a buttered bowl. Cover with saran wrap or a damp, flat dishtowel (not terry cloth). Let it raise and double. Punch down, divide in half and shape into 2 loaves. Let rise until 1 inch about top of pan. Bake at 375° for 30 minutes or until the tops are dark brown and it pulls away from the pan. |
