Colcannon - Recipe

Colcannon, a traditional Irish potato dish, can be made with either kale or cabbage. Kale is more colorful; cabbage may be more readily available. Either is very tasty. Colcannon makes a good "encore" use for left-over mashed potatoes.

Directions
  • Peel potatoes and chop onion. In enough salted water ( 1 teaspoon salt per quart of water) to cover, boil potatoes until very soft.
  • Wash kale, remove center stems and cook in boiling water about 5 minutes (use water from the potatoes if you wish). Drain and chop.
  • Heat butter in skillet and saute onions until soft. Add chopped kale to onions and stir to mix well.
  • Heat milk. Mash potatoes, adding warm milk as needed to desired consistency. Stir in onions and kale. Taste for seasoning; add salt if needed. Serve warm.

-4 tablespoons butter
-1/2 cup milk, or more if needed
