Pumpkin Nut Muffins Recipe
Directions
  • Preheat oven to 350°F.
  • Prepare muffin tin with liners or lightly grease each muffin cup.
  • In a large mixing bowl combine the first eight dry ingredients.
  • In a separate bowl slightly beat eggs. Add oil, pumpkin and vanilla. Stir to combine.
  • Add egg mixture to dry ingredients, stir until just combined.
  • Fold in nuts.
  • Spoon into muffin tin.
  • Bake 20 minutes or until a toothpick comes out clean.
  • Remove from oven. Leave muffins in pan 5 minutes before transferring to a cooling rack.

-1/2 cup vegetable oil
-2 eggs
-1 cup pumpkin, solid
-1 teaspoon vanilla
-1/2 cup walnuts, coarsely chopped
