- Using ice cream scoop, scoop out balls of gelato or ice cream. Stuff a cherry into center of each and place on cookie sheet. Work quickly to do this with each scoop of ice cream.
- Put in freezer until ready to serve.
- Sprinkle each tortufi with cocoa powder
- Serve immediately
