Beat hot mashed potato, sugar, butter, and salt together until thoroughly blended. Beat egg and egg yolk until light. Dissolve yeast in 3 tablespoons warm potato water. Combine the potato mixture with the beaten eggs and the rest of the potato water. Stir in the dissolved yeast and about half the flour. Beat until smooth, then add more flour to make a soft dough. Knead on a lightly floured board for 5 minutes or until smooth and satiny. Put the dough in a greased bowl and let rise to double in bulk. Shape the dough into dinner rolls. Cover let rise to double about 30 minutes. Bake (375) degrees for 20 minutes or until brown.

-2 packages dry yeast
-1 1/2 cups warm potato water, (105-115 degrees)
-1 egg and 1 egg yolk
