Green Bean Salad with Feta Recipe
  • Trim and snap fresh green beans. Cook in salted, boiling water until "al dente" (or just slightly crisp).
  • Whisk together oil, vinegar, orange juice, and fennel. Season with salt and pepper. Set aside.
  • When beans are finished, drain and allow to cool slightly. Toss beans with the feta cheese. Mix the beans and cheese with the baby greans.
  • Pour dressing mixture over the greens. Top with dried cranberries and/or almonds,  if desired.
  • Refrigerate until ready to serve.

-4 cups mixed baby greens
-1/2 pound fresh green beans
-2 ounces feta cheese
-2 tablespoons olive oil
-1 tablespoon balsamic vinegar
-1 tablespoon orange juice
-1/2 teaspoon fennel seed
- salt and pepper to taste
-1/3 cup dried cranberries (optional)
-1/4 cup slivered roasted almonds (optional)
