Beat eggs until light and fluffy. Add sugar and beat well. Stir in oil, vanilla and zucchini. Sift dry ingredients together and add to mixture; stir in nuts.

Pour into two greased and floured 8 x 4 bread pans. Cook 1 hour, or until it passes the toothpick test, at 325°

You can substitute the zucchini for pumpkin or any other squash.

-2 cups sugar
-1 cup oil
-3 teaspoons vanilla
-2 cups zucchini, grated
-2 tablespoons Orange Peel, grated (optional)
-3 cups flour
-1 teaspoon Salt
-1 teaspoon soda
-1/4 teaspoon baking powder
-3 teaspoons Cinnamon
-1/4 teaspoon nutmeg
-1/2 cup nuts
