Sift flour, baking powder and salt, cut in butter then blend in milk. Press dough into 9 x 13 pan. Spread raspberry jam over dough. Mix coconut with sugar, melted tablespoon of butter and beaten egg white. Spread on top of jam. Bake at 375° for 20 minutes. Cut into squares while still warm.
Note: Any jam could work.
