Tea Sandwiches with Crab and Chicken - Recipe

Tea Sandwiches with Crab and Chicken Recipe
Directions
Crab Spread:
  • Warm cream cheese to room temperature.
  • Mix crab meat with cream cheese. Add lemon juice, hot sauce, and celery and mix thoroughly. Chill.

Chicken Spread:
  • Warm cream cheese to room temperature.
  • Combine all ingredients until well blended. Chill.

Assembly:
  • Cut each loaf lengthwise into slices 1/2" thick, producing 5 to 6 slices per loaf.  Spread chicken mixture on face of one slice. Top with a slice of pullman cheese bread. Top that slice of bread with crab mixture and add a third slice to create 3 tiers of bread. Repeat.
  • Cut the tiers into individual sandwiches approximately 1 to 2 inches wide and secure with decorated toothpicks (garnish each toothpick with an olive, if desired).

-8 ounces cream cheese
-8 ounces crab meat
-2 tablespoons lemon juice
-4 tablespoons hot sauce
-1/4 cup celery, chopped into fine bits
- CHICKEN SPREAD:
-8 ounces cream cheese
-2 cups minced cooked chicken
-1/3 cup mayonnaise
- salt and pepper, to taste
- onion powder, to taste
- BREAD
-1 loaf Pullman white bread
-1 loaf Pullman rye bread
-1 loaf Pullman cheese bread
