- Preheat gas grill or light charcoal.
- Peel potatoes and slice, as uniformly as possible, into rounds about 1/2 inch thick. Mix oil and soy sauce; brush or rub all over potato slices.
- Put slices in a grilling basket to make turning easier. If cooking directly on the grill, make sure grate is very well oiled. Cook over medium-low heat, to prevent burning, until soft--about 7 - 10 minutes per side. Turn occasionally.
- While the potatoes cook, remove the zest and juice from a small lemon. Mix with melted butter. Add parsley and brush or drizzle the mixture over the cooked sweet potatoes. Serve hot.
