Lobster Mushroom Salad Recipe
  • Combine tomatoes, parsley, basil and minced garlic in a large bowl.
  • In a small bowl, whisk together fresh lemon and oil and pour over tomato mixture. Salt and pepper to taste. Cover and chill for 30 minutes.
  • Place greens in a salad bowl. Layer imitation crab meat and lobster mushrooms. Toss with chilled dressing.
    (The arugula provides a peppery taste and mizuma provides an earthy taste.)

-4 vine ripened or Roma tomatoes, seeded and finely chopped
-2 tablespoons fresh parsley, chopped
-1 tablespoon fresh basil, chopped
-2 teaspoons minced garlic
-1/4 cup fresh lemon juice
-3/4 cup canola oil
- salt and pepper to taste
-5 to 6 lobster mushrooms (or similar firm mushrooms), cut into bite sized pieces
-5 ounces spring greens
-2 ounces arugula or mizuna
-16 ounces imitation crab
