Melon Salsa - Recipe

The sweet flavor of the juicy melon pairs wonderfully with the hot and spicy peppers in this great salsa recipe. Serve this Mexican-inspired salsa as an accompaniment for grilled fish during a summertime cookout or Cinco de Mayo celebration.

Melon Salsa Recipe
  • Combine the first 9 ingredients in a bowl.
  • In separate bowl, combine the remaining ingredients. Whisk together and pour over first 9 ingredients, toss well.
  • Cover and refrigerate. Great when served with seafood or chicken dishes.

-1 1/2 cups cantaloupe, peeled and diced
-1 1/2 cups honeydew, peeled and diced
-1 mango, peeled and diced
-1/2 cup green bell pepper, chopped fine
-1/2 cup red bell pepper, chopped fine
-1/3 cup red onion, chopped fine
-4 ounces diced green chilies or 2 jalapeño pepper, seeded and chopped fine
-2 tablespoons fresh cilantro, chopped
-1 clove garlic, minced or chopped fine
-3 tablespoons fresh lime juice - squeezed from lime
-1 tablespoon white wine vinegar
-1 teaspoon canola oil
-1/2 teaspoon ground cumin
