Breakfast Tortilla Cups - Recipe

A fun individual breakfast fiesta that can be made for each person's liking. The tortilla gets a little crispy with the light and fluffy eggs.

Directions
Preheat oven to 350 degrees F. Spray a muffin pan with cooking spray.

Using a cover or circle of some sort, cut tortillas into circles. Push circles into prepared pan, overlapping edges of tortilla pieces, if necessary.

In a bowl, combine eggs, sour cream, half of the cheese, salt and pepper. Carefully pour into tortilla cups.

Top each desired toppings like ham, onions and green pepper.

Bake for 12-15 minutes.

Top with remaining cheese and bake for 5 more minutes.

Carefully remove from muffin cups. Serve hot with salsa, if desired.
