Eggs with Tator Tot Quiches - Recipe

Individual egg quiches with a potato crust. Perfect for company. You can add any ingredients you want to make these bite sized breakfasts.

Preheat oven to 400 degrees. Grease muffin tins very well.

Thaw tator tots in the microwave for 3-4 minutes.

Place 3 tator tots in each muffin well. Press with a glass to flatten. Bake your tator tots for 10 minutes.

Lower oven temperature to 350 degrees.

In a medium bowl, combine egg and milk. Whisk.

Top each tator with bacon and ham, or any other toppings you prefer. Top with egg mixture and then cheese.

Bake for 18-20 minutes.

To remove from the pan, run a butter knife around the edge of each one to loosen it from the sides, and use a spoon to pop them out.
