CAULIFLOWER CASSEROLE 5 - Recipe

Directions
Preheat oven to 350°. Wash and separate cauliflower into large florets. Boil water, add salt and cauliflower and simmer, uncovered for 15 minutes until tender; drain and mash. Sauté onions in oil, cook until soft and lightly browned. Combine onions and cauliflower, add pepper, eggs and matzoh meal. Place in greased 9 inch square pan or casserole dish. Sprinkle with bread crumbs, bake for 45 minutes or until golden.

-4 cups water
- salt and freshly ground pepper, to taste
-2 onions, diced (large)
-4 tablespoons vegetable oil, plus oil for the pan
-2 eggs, beaten (large)
-2 tablespoons matzoh meal
-2 tablespoons bread crumbs
