Swedish Mashed Potatoes - Recipe

Make sure you thaw out the spinach in your fridge for a day or two before

starting this recipe. Take the potatoes and wash them, leaving the skin on, and then chop them up into cubes putting them into the pot. I have a tall pot, and usually have a few potatoes left over, stop about two inches from the top. Once you have them all cut, fill up the pot with water and boil until you can easily stick a fork though a piece and break it apart. Pull it off the heat and strain the water out of the pot. Put the potatoes back into the pot and start mashing, while doing this heat up the spinach in the microwave and strain out as much water as possible from them. Once it's all mashed add in one container of sour cream and a stick of Butter, mixing it in. Once it's mixed add in more sour cream and butter to your taste. Take the warm strained spinach and add it to the pot last, mixing everything together until fully mixed. Add salt and pepper to taste, or let your guests add it in.

I usually make this for holidays; this will be a large recipe. Change amounts depending on how much you need for your family or get together.
