Rinse lentils, cover with cold water and 1 tsp. salt, bring to a boil, boil for 3-5 minutes, turn off heat and let cool in water. Lentils will be just right. Cook rice in water and chicken soup seasoning. Sauté chopped onions in oil until golden brown. Fluff rice, drain lentils, add to rice, add onions and black pepper, gently mix to combine, and adjust seasoning. Heat before serving.
-1 cup lentils
-2 cups rice
-1 onion chopped (large)
-4 tablespoons oil
-4 cups water
-4 teaspoons chicken soup seasoning
-1/2 teaspoon black pepper
- Salt to taste
