CRISPY ROASTED POTATOES - Recipe

Directions
Preheat oven to 450°. Place the potatoes in a large bowl and drizzle with olive oil. Using your hands turn potatoes until thoroughly coated with the oil. Transfer the potatoes to a baking sheet in a single layer, and scatter the garlic cloves over the top. Sprinkle the potatoes with the herbs, pepper, and salt. Bake, turning with a spatula every 20 minutes or so, until crispy and golden, about 1 hour.

-3 tablespoons extra virgin olive oil
-4 cloves garlic, peeled
-1 tablespoon Herbs de Provence (see misc. recipes)
-1 teaspoon freshly ground black pepper
-1/2 teaspoon Salt
