- Heat oil over medium heat in a large stir fry pan. Add onions, garlic and mushrooms; cook and stir until tender.
- Mix in bread crumbs, and cook until browned, stirring frequently. Stir in kale, and cook until wilted.
- Serve hot or warm. May garnish with crumbled feta cheese.
